In Minnesota and across the Upper Midwest, a hotdish is the casserole that shows up at family dinners, church suppers, and potlucks. The usual formula is meat, vegetables, a creamy binder, and a starch. Tater tot hotdish may be the best-known version: the frozen potatoes make a crisp, practical lid over the beef and vegetables. This recipe keeps that familiar shape but makes the mushroom sauce in the skillet.

Heat the oven and season the beef: Set a rack in the middle of the oven and heat it to 400°F (204°C). Melt 14 g (1 tbsp) butter in the skillet over medium-high heat. Add the ground beef, 6 g (1 tsp) Diamond Crystal kosher salt or 4 g (2/3 tsp) Morton kosher salt, and 1 g (1/2 tsp) black pepper.

Brown the beef safely: Cook for about 5 minutes, breaking the beef into small crumbles, until browned and the center of the largest pieces reaches 160°F (71°C). Transfer the beef to the baking dish with a slotted spoon. Pour off all but 15 ml (1 tbsp) fat; keep the browned bits in the pan. Wash your hands and any utensils or surfaces that touched the raw beef before handling ready-to-eat ingredients.

Brown the mushrooms: Melt 14 g (1 tbsp) butter in the same skillet over medium-high heat. Add the mushrooms, half the onion, 4 g (3/4 tsp) Diamond Crystal kosher salt or 2 g (1/3 tsp) Morton kosher salt, and 1 g (1/2 tsp) black pepper. Leave the vegetables mostly undisturbed for about 5 minutes so they take on color, then stir often for 8 to 10 minutes, until tender and their liquid has cooked away. Stir them into the beef and spread the mixture evenly in the baking dish.

Build the sauce: Melt the remaining 57 g (4 tbsp) butter in the skillet over medium heat. Add the carrot, celery, garlic, remaining onion, remaining 6 g (1 tsp) Diamond Crystal kosher salt or 4 g (2/3 tsp) Morton kosher salt, and remaining 1 g (1/2 tsp) black pepper. Cook for 8 to 10 minutes, stirring occasionally, until tender with a little browning at the edges. Sprinkle in the flour and stir constantly for 3 minutes; no dry flour should remain.

Thicken the sauce: Pour in the milk slowly while stirring, then stir in the broth and soy sauce. Cook for about 3 minutes, stirring often, until the sauce coats the spoon. Remove from the heat and stir in the parsley.

Assemble the hotdish: Scatter the frozen vegetables over the beef mixture and pour the sauce evenly on top. Add the cheddar, then arrange the frozen tater tots in a snug single layer. Depending on their shape, a few tots may be left over.

Bake: Bake uncovered for 45 to 50 minutes, until the filling bubbles at the edges and the tots are deep golden brown. The center of the casserole must reach 165°F (74°C). If the tots need more color, broil for 1 to 2 minutes while watching closely.

Rest and serve: Let the hotdish stand for 10 minutes so the sauce settles. Scatter with more parsley and spoon onto warm plates, making sure each serving gets both creamy filling and crisp tots.

Half recipe (½×): Use a 20 cm (8-inch) square baking dish. Begin checking after 35 minutes, but still verify 165°F (74°C) in the center.

Double recipe (2×): Divide between two 33 x 23 cm (13 x 9-inch) baking dishes rather than making a deeper casserole. Rotate the dishes halfway through baking and allow 5 to 10 extra minutes if both share one oven.
