- 20 g (1 1/2 tbsp) unsalted butter, divided
- 1 medium brown onion (about 150 g / 5 oz), finely chopped
- 650 g (1 lb 7 oz) lean ground beef
- 16 g (2 tbsp) plain all-purpose flour
- 250 ml (1 cup) Australian lager or other full-flavored lager
- 375 ml (1 1/2 cups) low-sodium beef stock
- 1 small carrot (about 75 g / 2 1/2 oz), finely diced
- 1 celery stalk (about 50 g / 1 3/4 oz), finely diced
- 2 garlic cloves, crushed
- 2.5 ml (1/2 tsp) fresh thyme leaves, finely chopped
- 16 g (1 tbsp) tomato paste
- 22 ml (1 1/2 tbsp) Worcestershire sauce
- 9 g (1 1/2 tsp) Vegemite
- 1 bay leaf
- 1.25 ml (1/4 tsp) fine salt
- 2.5 ml (1/2 tsp) freshly ground black pepper
Pastry and Serving
- 3 ready-rolled frozen shortcrust pastry sheets (about 600 g / 1 lb 5 oz), thawed but cold
- 3 ready-rolled frozen all-butter puff pastry sheets (about 500 g / 1 lb 2 oz), thawed but cold
- 1 large egg, beaten with 5 ml (1 tsp) water
- 90 ml (6 tbsp) tomato sauce (ketchup), to serve
Substitutions:
- Australian lager → Any full-flavored lager; use an alcohol-free lager if preferred
- Vegemite → Marmite, noting that it is a little sweeter and less distinctly Australian
- Individual pie tins → One 23 cm (9-inch) deep pie dish; bake until the center reaches the reheating temperature listed below

Instructions
Preparation (Active time: 30 min)
Build the filling: Heat the oil and 10 g (2 tsp) of the butter in the saucepan over medium heat. Cook the onion for 8 to 10 minutes, stirring often, until soft and lightly golden. Transfer it to a bowl.
Brown the beef: Raise the heat to medium-high. Add half the beef and cook, breaking it into small crumbles, until browned and at least 160°F (71°C), 5 to 7 minutes. Transfer it to the onion and repeat with the remaining beef. Add the remaining butter, sprinkle in the flour, and stir for 1 minute.
Cooking (Active time: 15 min)
Simmer the filling: Gradually stir in the lager and stock, scraping the browned bits from the pan. Return the beef and onion, then add the carrot, celery, garlic, thyme, tomato paste, Worcestershire sauce, Vegemite, bay leaf, salt, and pepper. Bring to a boil, reduce the heat to low, and simmer uncovered for 60 to 75 minutes. Stir every 10 minutes. The vegetables should be tender and the gravy thick enough that a spoon drawn across the pan leaves a trail for a few seconds.
Cool completely: Remove the bay leaf. Spread the filling in a shallow dish and refrigerate uncovered for about 45 minutes, until cold. Do not fill pastry with warm beef; it will melt the pastry fat and make the crust soggy.
Assembly & Finishing
Line the tins: Cut six 15 cm (6-inch) rounds from the shortcrust. Ease them into the tins without stretching, leaving a small overhang. Divide the cold filling evenly among the shells, about 180 g (6 1/2 oz) per pie. Brush the exposed pastry rims with egg wash.
Top and chill: Cut six 11 cm (4 1/4-inch) rounds from the puff pastry. Lay them over the filling, press the edges firmly to seal, and trim any ragged overhang. Cut a small steam vent in each lid and brush with egg wash. Chill the assembled pies for 30 minutes.
Bake: Put the baking tray in the oven and preheat to 400°F (200°C). Set the tins on the hot tray and bake for 10 minutes. Reduce the oven to 350°F (180°C) and bake for 15 to 20 minutes more, until the lids are deeply golden and the filling reaches 165°F (74°C). Rest for 10 minutes, remove from the tins, and serve hot with tomato sauce.
