Substitutions:
- No rotisserie chicken → 3 cups shredded leftover roast chicken plus 2 tablespoons chicken broth in place of the bag juices — reheat the shredded meat to 165°F (74°C) before combining with the hot rice (see Food Safety)

Instructions

Shred the chicken in the bag: Open the chicken bag wide and set it in a bowl or on a plate to catch drips. Working directly in the bag, pull the meat off the bones with your hands or two forks, shredding it into bite-sized pieces and discarding the bones, cartilage, and skin you don't want. Leave any juices pooled in the bottom — that's most of the seasoning. If the chicken has been refrigerated rather than fresh off the rotisserie, reheat the shredded meat to 165°F (74°C) — stir it in a hot pan for a minute or microwave it covered — before moving on.
Have the rice hot and ready: If cooking rice from scratch, start it before you shred the chicken so it's steaming when you need it. If using microwaveable pouches, heat them per the package.
Assembly & Finishing (Active time: 5 min)
Add the hot rice to the bag with the chicken, followed by the scallions, soy sauce, sesame oil, rice vinegar, and chili crisp.
Seal and toss: Press out the excess air, seal the bag, and gently shake and squeeze it from the outside until the rice, chicken, and sauce are evenly combined — the heat of the rice should warm the chicken through as you go. Taste through the bag opening and add more soy sauce or chili crisp if it needs it.

Food Safety & Storage
- Chicken temperature: Rotisserie chicken is fully cooked when you buy it, but it needs to stay either hot (above 140°F/60°C) or refrigerated — don't let it sit at room temperature more than 2 hours. Scaling Notes
Half recipe (½×): A single rotisserie chicken is more meat than you need — save the other half of the shredded chicken for sandwiches or soup, and halve the rice and sauce.
