Instructions

Preparation (Active time: 10 min)

Add the diced chicken, green chiles, cumin, chili powder, salt, and pepper. Cook, stirring occasionally, until the chicken is cooked through and reaches 165°F (74°C), about 6 to 8 minutes.

  2. Finish the filling: Stir in the beans and 60 ml (1/4 cup) enchilada sauce. Cook for 1 to 2 minutes, just until the beans are hot and the filling is lightly coated but not wet. Taste and adjust salt. Remove from the heat and stir in 115 g (1 cup) of the shredded cheese.

  3. Fill and roll: Spoon about 100 g (heaping 1/2 cup) filling down the center of each flour tortilla. Roll snugly around the filling and place seam-side down in the sauced baking dish. For corn tortillas, use a smaller spoonful of filling and arrange 12 to 16 smaller enchiladas snugly in the pan.

  4. Sauce and cheese: Pour the remaining enchilada sauce evenly over the tortillas, leaving the very edges slightly exposed if you like a few crisp spots. Sprinkle with the remaining 225 g (2 cups) cheese.

Assembly & Finishing
