Food & Wine reported in May 2026 that TikTok cooks had turned the method into a cookout and potluck trend by air-frying or baking short pasta until crisp, then tossing it with classic pasta salad add-ins. This version is adapted from the Italian-style consensus across Just a Taste, Allrecipes, The Modern Nonna, and Food & Wine: crisped short pasta, briny olives, cured meat, cheese, vegetables, Parmesan, and a punchy Italian dressing.
Ingredients
Crispy Pasta
- 340 g (12 oz) rotini, farfalle, shells, or another short pasta
- 30 ml (2 tbsp) extra-virgin olive oil
- 3 g (1/2 tsp) kosher salt, plus more for pasta water
- 1 g (1/4 tsp) freshly ground black pepper
- 25 g (1/4 cup) finely grated Parmesan cheese
- 2 g (1 tsp) Italian seasoning, optional
Salad Mix-Ins
- 150 g (1 cup) cherry tomatoes, halved
- 100 g (2/3 cup) green, red, or yellow bell pepper, diced
- 50 g (1/3 cup) red onion, finely diced
- 115 g (1/2 cup) provolone, diced into 6 mm (1/4 inch) cubes
- 115 g (1 cup) hard salami, diced into 6 mm (1/4 inch) cubes
- 70 g (1/2 cup) pitted black olives or Kalamata olives, halved if large
- 15 g (1/4 cup) grated Parmesan cheese, for finishing
- 15 g (1/2 cup loosely packed) fresh basil leaves, torn, optional
Italian Dressing
- 80 ml (1/3 cup) red wine vinegar
- 10 ml (2 tsp) fresh lemon juice
- 4 g (2 tsp) dried oregano
- 2 small garlic cloves, minced
- 4 g (1 tsp) sugar or honey
- 120 ml (1/2 cup) extra-virgin olive oil
- 3 g (1/2 tsp) kosher salt, plus more to taste
- 1 g (1/4 tsp) freshly ground black pepper, plus more to taste
- Pinch red pepper flakes, optional
Substitutions:
- Rotini -> farfalle, shells, penne, orecchiette, or cavatappi; avoid long pasta because it crisps unevenly and is hard to toss.
- Provolone -> mozzarella pearls, diced mozzarella, Asiago, or feta.
- Hard salami -> pepperoni, soppressata, grilled chicken, chickpeas, or omit for a vegetarian version.
- Bell pepper and olives -> artichoke hearts, roasted red peppers, cucumber, banana peppers, pepperoncini, or sun-dried tomatoes.
- Homemade dressing -> 180 ml (3/4 cup) bottled Italian dressing whisked with 15 ml (1 tbsp) mayonnaise for a creamier Allrecipes-style shortcut.

Instructions
Preparation (Active time: 25 min)
Cook the pasta: Bring a large pot of well-salted water to a boil. Add the pasta and cook until just al dente, usually 9 to 11 minutes depending on shape. Drain well and shake off excess water.
Season for crisping: Transfer the hot pasta to a large bowl. Toss with the olive oil, kosher salt, black pepper, Parmesan, and Italian seasoning, if using. Spread the pasta on a rimmed baking sheet for 5 minutes so steam can escape; drier pasta crisps better.
Prep the salad mix-ins: While the pasta cools slightly, halve the tomatoes, dice the bell pepper and red onion, cube the provolone and salami, and cut any large olives in half. If the onion tastes sharp, soak it in cold water for 10 minutes, then drain well.
Make the dressing: Whisk together the red wine vinegar, lemon juice, oregano, garlic, sugar, salt, pepper, and red pepper flakes. Slowly stream in the olive oil while whisking until the dressing looks glossy and lightly emulsified. Taste and adjust with more salt, pepper, or lemon.
Cooking (Active time: 20 min)
Air-fry the pasta: Preheat the air fryer to 400°F (200°C). Add the pasta to the basket; it does not need to be in a perfect single layer, but it should not be packed tight. Air-fry for 18 to 20 minutes, shaking the basket every 5 minutes, until the pasta is deeply golden, dry to the touch, and crunchy at the edges.
Cool the crispy pasta: Tip the crisped pasta back onto the rimmed baking sheet and let it cool for 10 minutes. It will firm up more as it cools.
Assembly & Finishing
Dress the vegetables: In a large serving bowl, combine the tomatoes, bell pepper, red onion, provolone, salami, olives, and basil, if using. Pour over about two-thirds of the dressing and toss until everything is lightly coated.
Finish at the last minute: Add the crispy pasta and toss gently. Add more dressing only as needed; too much dressing softens the pasta quickly. Finish with grated Parmesan and a few grinds of black pepper.
Serve immediately: Serve while the pasta still has its crouton-like crunch. If the salad sits for more than 30 minutes, expect the texture to become closer to a classic pasta salad.
Food Safety & Storage
- Minimum safe internal temperature: Not applicable if using ready-to-eat salami and pasteurized cheese. If substituting cooked chicken, cook it to 165°F (74°C).
- Cold holding: Because this salad contains cheese, salami, and cut vegetables, keep it refrigerated until serving and do not leave it at room temperature for more than 2 hours, or more than 1 hour above 90°F (32°C).
- Storage: Refrigerate leftovers in an airtight container for up to 3 days. The pasta will soften after dressing but remains edible.
- Make-ahead storage: For best texture, refrigerate the dressed vegetables, cheese, and salami for up to 24 hours. Store the crispy pasta separately in an airtight container at room temperature for up to 1 day, then combine just before serving.
- Freezing: Not recommended. The vegetables release water, the cheese texture changes, and the crispy pasta loses its crunch.

- Serve as a cookout side with grilled chicken, salmon, burgers, sausages, or vegetable skewers.
- Pair with sparkling water, lemonade, iced tea, or a chilled Italian white wine.
- Traditional serving style: present in a wide bowl and add the crispy pasta at the table so guests get the intended crunch.
Scaling Notes
Half recipe (1/2x): Use 170 g (6 oz) pasta and halve the salad mix-ins. Air-fry for 14 to 18 minutes, checking early because the smaller batch may crisp faster.
Double recipe (2x): Cook and crisp the pasta in two air-fryer batches so it browns evenly. Dress the vegetables in a very large bowl or two bowls, then add the crispy pasta just before serving.
