Blanket Dumplings
Why This Went Viral
The whole appeal is that nobody folds anything. Instead of pleating a wrapper around a spoonful of filling, you roll the pork mixture into a ball, sear it in the pan, then drape a single square wonton wrapper over the top like a little blanket and let it steam into place. The bottom crisps into a potsticker skirt, the wrapper on top goes soft and silky, and the whole batch cooks in one skillet in under 20 minutes. That's the trade nobody expects: dumplings are supposed to be the fussy, sit-around-the-table-with-family kind of project, and this version skips the part everyone actually dreads. Versions of the technique have circulated on TikTok and Instagram through the spring and summer of 2026, and food blogs have been racing to publish their own take on it since around April. Tracking it to one single original video is genuinely hard — several outlets that tested the recipe say the same thing, that it's impossible to pin down who posted it first, though a few point to Seattle-based recipe developer @cookingwithaila's earlier no-fold dumpling videos as part of what got the format moving.
Ingredients
Main Components
- 450 g (1 lb) ground pork
- ⅓ cup (about 4) green onions, thinly sliced, plus more for topping
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1½ teaspoons sesame oil
- 1½ teaspoons rice vinegar
- 1 teaspoon chili crisp, plus more for serving
- ¼ teaspoon black pepper
- 20 square wonton wrappers
- 2 tablespoons avocado or vegetable oil, divided
- ⅓ cup water or low-sodium chicken broth
For the Dipping Sauce
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 green onion, finely chopped
- 1-2 teaspoons chili crisp
Substitutions:
- Ground pork → ground chicken or ground turkey works, though the filling will be leaner and cook slightly faster; check for 165°F (74°C) instead of 160°F (71°C)
- Wonton wrappers → round dumpling/gyoza wrappers work too; they won't cover the meatball edge to edge, so tuck the exposed sides down against the pan before adding water
- Standard wonton wrappers (contain egg) → egg-free wonton or dumpling wrappers, sold at most Asian grocers, for an egg allergy
- Soy sauce → tamari for a gluten-free version (the filling and sauce are otherwise gluten-free)
- Chili crisp → a pinch of red pepper flakes plus an extra ½ teaspoon sesame oil if you don't have any on hand
Equipment
- 12-inch nonstick or well-seasoned skillet with a lid
- Mixing bowl
- Small bowl for the dipping sauce
- Instant-read thermometer
Instructions
Preparation (Active time: 10 min)
Mix the filling: In a bowl, combine the ground pork, green onions, ginger, garlic, soy sauce, sesame oil, rice vinegar, chili crisp, and black pepper. Mix with your hands or a spoon until evenly combined and slightly tacky — that stickiness is what holds each meatball together once it hits the pan.
Portion the meatballs: Divide the filling into 20 pieces (a 2-tablespoon cookie scoop makes this fast) and roll each into a loose ball.
Make the dipping sauce: Whisk the sauce ingredients together in a small bowl and set aside.
Cooking (Active time: 10 min)
Sear the meatballs: Heat 1 tablespoon of oil in the skillet over medium-high heat. Add the pork balls, spaced about an inch apart (work in two batches if they don't all fit), and sear for about 1 minute per side, just until the outside firms up. They won't be cooked through yet.
Drape and steam: Lay a wonton wrapper over each meatball and press gently around the sides so it clings to the meat like a little blanket. Pour in the water or broth, cover immediately, and steam for 5-6 minutes, until the wrappers turn translucent and tender and the pork reaches 160°F (71°C) on an instant-read thermometer.
Re-crisp: Uncover and cook 1-2 minutes more over medium-high heat, letting any remaining liquid cook off, until the bottoms are golden and crisp again.
Assembly & Finishing (Active time: 5 min)
Plate and garnish: Slide the dumplings out of the pan, crispy side up, onto a serving plate. Scatter with extra green onions and drizzle with a little more chili crisp if you want more heat.
Serve: Serve hot with the dipping sauce on the side.
Food Safety & Storage
- Minimum safe internal temperature: 160°F (71°C) for ground pork — check with a thermometer inserted into the center of a meatball through the wrapper; ground meat should never be served rare or medium-rare because grinding spreads any surface bacteria through the whole batch.
- Storage: Refrigerate cooked dumplings in an airtight container for up to 3 days.
- Freezing: Freeze the raw, wrapped (uncooked) dumplings in a single layer on a tray, then transfer to a bag once solid; cook straight from frozen, adding 2-3 extra minutes to the steaming step. Freezing after cooking works too, but the wrapper texture suffers more on reheating.
- Reheating: Reheat in a covered skillet with a splash of water over medium-low heat until warmed through and the bottoms re-crisp; the microwave works in a pinch but leaves the wrapper chewy instead of crisp.
Serving Suggestions
- Steamed jasmine rice on the side turns this into a full dinner
- A quick cucumber salad with rice vinegar and sesame oil balances the richness
- Add a pot of hot and sour or egg drop soup for a takeout-style spread
Scaling Notes
Half recipe (½×): Everything scales down cleanly; you'll likely fit the whole batch in one pan without working in batches.
Double recipe (2×): Sear in batches so the pan isn't crowded — too many meatballs at once steams them instead of searing, and you'll lose the crisp bottom. Keep finished dumplings warm in a low oven while you finish the rest.
Chef's Notes
- Sourcing: Square wonton wrappers (not the round gyoza kind) give the best "blanket" coverage since the corners drape past the meatball and crisp up into little skirts. Look for them in the refrigerated section near the tofu at most grocery stores.
- Make-ahead: The filling can be mixed and portioned into balls up to a day ahead, covered and refrigerated. Don't drape the wrappers on until you're ready to cook, or they'll dry out and tear.
- Variations: Swap the pork for a shrimp-and-pork blend, or stir chopped napa cabbage or shiitake into the filling for more texture.
- Common pitfalls: Skipping the sear before draping the wrapper is the most common shortcut, but it's what gives the bottom its crust — without it, the dumplings just taste steamed. Also don't skip checking the temperature; because the wrapper hides the meat, it's easy to assume a dumpling is done before the center actually reaches 160°F.
